Les sauces vegan : guide complet sur le sujet 

Véritable mode de vie ancré dans nos cultures, le veganisme a su trouver sa place dans le milieu culinaire. Les sauces vegan, tout comme les autres produits végétaliens, n’ont pas fini de nous surprendre.

Et si les industriels recherchent la perfection dans leurs recettes végétales, c’est bien parce que la demande sur le marché explose. Mais savez-vous au juste, ce qu’est une sauce vegan ? Connaissez-vous les origines de cette tendance “free animal” ? Nous vous expliquons tout dans les quelques lignes qui suivent. 

Qu’est-ce qu’une sauce “vegan” ?

Comme pour les sauces dites “traditionnelles”, les sauces vegan ont pour objectif d’accompagner ou de relever un plat afin de lui apporter plus de saveur.
Ce qui différencie ces dernières, c’est la liste des ingrédients qui les composent.
Car les sauces végétaliennes ont une particularité : elles ne contiennent aucun élément d’origine animale.
Lait, œufs, et autres produits issus de nos amis les animaux ont été bannis de leur recette. En effet, ils ont été remplacés par des ingrédients 100% à base de plantes, de légumineuses, de noix, d’huiles végétales ou d’épices. 

Certains sceptiques peuvent se demander ce qu’il en est d’un point de vue gustatif : “Est-ce que ces sauces sont agréables en bouche ?”. Ou encore : “Est-ce que leur goût ressemble vraiment aux sauces que l’on trouve habituellement dans les commerces alimentaires ?”.
Ces questions sont tout à fait légitimes, surtout pour des personnes qui n’ont encore jamais eu l’occasion de les déguster. Mais on vous rassure : les sauces vegan ont les mêmes saveurs que leurs consœurs. Vous ne verrez donc pas la différence si vous mangez vos frites avec une sauce au ketchup vegan, par exemple. 

Sauces vegan :  les origines 

Les sociétés contemporaines sont en constante évolution, et ce, dans tous les domaines. De nouvelles façons de consommer voient le jour.
C’est pourquoi de plus en plus d’individus confèrent des valeurs morales, sanitaires ou environnementales à ce qu’ils mettent dans leur assiette.
Pour ces défenseurs du bien-être animal et de l’écologie, plus question de consommer de manière aveugle et “irresponsable”.
La liste des ingrédients, tout comme le processus de fabrication des denrées alimentaires sont passées au crible afin de s’assurer qu’ils correspondent parfaitement à une certaine éthique.

Quelles sont donc les principales moralités recherchées au travers de cette alimentation 100% végétale ? 

Il faut savoir que le régime vegan repose sur trois valeurs fondamentales : 

  • le droit des animaux à ne plus souffrir pour combler des besoins humains ;
  • le respect de la nature, car l’industrie de l’élevage pollue fortement notre planète ;
  • la santé, puisqu’une consommation excessive de viande ou de produits laitiers est davantage remise en cause par les professionnels de santé.

Tendance de sauces végétaliennes dans le marché alimentaire

Comme évoqué précédemment, le “vegan way of life” a le vent en poupe.
Le veganisme connaît un succès grandissant depuis son apparition en Angleterre dans le milieu des années 1940, avec la création de la Vegan Society par Donald Watson. 

Ce mouvement, d’abord marginal, a réussi à séduire des millions de personnes à travers le monde.
La Belgique ne fait pas exception, puisque d’après un article paru en 2023, un belge sur trois avoue manger des aliments végétariens au moins une fois par semaine.

Et c’est cet engouement qui va pousser les spécialistes de l’agro-alimentaire à s’intéresser à cette tendance “Cruelty-free”.
Pour répondre aux besoins croissants du marché, ils sont désormais nombreux à proposer des produits végétaliens.
L’enjeu est crucial pour ces fabricants de nourriture sans ingrédients d’origine animale. En effet, les aliments proposés à la consommation doivent à la fois répondre à des modes de production éthique, tout en satisfaisant les papilles gustatives du grand public.

Steak & entrecote

Black Pepper sauce is the sauce from the August & Henri ® range to serve with steaks and entrecote. The spicy peppercorns in combination with a slightly fruity undertone make Black Pepper Sauce perfectly suited to these meat dishes.

The tartar sauce also goes well with steak and entrecote. Onions and herbs provide an extra taste sensation, while capers add a fresh touch to the meat.

Finally, cocktail sauce and cold curry sauce are also often served with these meat dishes. Just like the classic mayonnaise and tomato ketchup sauces. In short, enough choice with August & Henri ® sauces!

The ribs

August & Henri ® barbecue sauce is mildly sweet and lightly smoky. The viscous structure makes the sauce perfect for dressing the sides of ribs. To lick your thumbs and fingers!

What is blanche sauce?

Blanche sauce (white sauce) is part of our family of cold emulsified August & Henri sauces. The white sauce is very creamy and very smooth in texture. The taste is delicious and very fresh thanks to the crunchy pickles and a touch of mustard. Herbs complete the sensation of taste!

Fresh & Saucy Foods had the pleasure of participating in the 44th International Foodex Show in Japan in Tokyo. This event was a real success for our range of vegan sauces from August & Henri! TV interview, articles written by bloggers, August & Henri really seduced Japanese visitors!
